The most used recipe in our house is my version of white soda bread;
Wheat-free Dairy-free Oaten Soda Loaf
Preheat the oven to 200C
Line a loaf tin with tinfoil.
Ingredients
250g Odlums Tritamyl White Self-Raising flour
25g Instant Hot Oat Cereal such as Ready Brek
75g Porridge Oats, milled in a food processor for a 4 or 5 pulses
3/4 teaspoon salt
2 teaspoons xantham gum
+/- 350 ml of Oat milk such as Oat-Dream
*Sieve the flour into a large bowl.
*Add the oat cereal, milled oats, salt and xanthan gum.
*Make a well in the middle of the bowl slowly trickle in the oat milk while stirring in small circles, slowly drawing in the dry ingredients down from the sides.
*Add milk until the mixture forms a soft dough that comes together in a ball. Continue to work the dough with the wooden spoon for 1 more minute.
*Put dough in the tin and smooth the surface with the wooden spoon.
*Bake in the middle of the oven for 35 to 40 minutes.
*Take out of the tin when done, immediately peel off the tin foil. Then wrap in a clean tea-towel and leave to cool on a rack.(The tea-towel stops the crust from being to tough)
Chicken and Veggie Burgers
Ingredients (this is approximate because I used what I have in the cupboard on the day)
400g raw chicken meat
2 inches of the oaten soda loaf (I use the bit that is left over at the end of the day) chopped roughly
Handful of chopped celery
2 small carrots roughly chopped
1/2 an egg, beaten
Teaspoon of fresh chopped herbs (or half a teaspoon of dried mixed herbs)
Salt and Pepper
1 Teaspoon of Chicken concentrate (Knorr A Touch of Taste)
Oil for frying
Preheat oven to 180C
Put the bread into the food processor and process into breadcrumbs. Then put into a large bowl.
Put carrots and celery in the food processor and chop fine.
Put the veg into the bowl and process the chicken until chopped fine ( but not to a paste)
Mix in the seasonings and the half egg.
Form into patties and fry in hot oil until golden on both sides (2 to 3 minutes each side)
Then put on a baking tray and bake in the oven for approx.15 minutes till cooked through.

Orange and Almond Cake
with no wheat or dairy!!!!
Ingredients
2 large or 3 medium oranges
6 eggs
225g caster sugar
200g ground almonds
1tsp baking powder
Method
Place the clean, whole and unpeeled fruit in a little water, and bring to the boil. Simmer for at least 1½ hours or until soft, adding more water when necessary.
Drain the oranges, cut into quarters, discard any major pips, and whiz (including peel) in the food-processor, then cool. Throw in the rest, egg*, sugar, almonds, and baking powder.
Heat the oven to 180C
*You can add the yolks then beat the egg whites until softly peaky and fold gently into the mixture.
Pour into a 23cm (9in) springform cake tin and bake for an hour, until firm to the touch (cover with a loose sheet of foil if over-browning). Cool in the tin and dust with icing sugar to serve.

Shopping Trolley Cover
I made a shopping trolley cover for Alex. Shopping trolleys tend to be pretty unhygienic and she is teething at the moment. Yuck!
It is made from 2 very cheap fleece throws with a little felt to make the owl face.I'm going to add a couple of toy loops before it goes out again.

Naalbinding
It has been a year now since I started and I am really enjoying naalbinding. Getting going was an exercise in brain bending and finger knotting. Thank you to Shirley for her help and her expertise as a sounding board. The stitches I can do easily are York, Oslo, Korgen, Broden and Asle. Dalby is still requiring a little thought and I haven't even attempted Finnish yet.
The Vadrefjiord Vikings' ears were kept warm this Winter by my hats... lots of hats!
Three of the baby Vikings are wearing my hats and more are lurking under helms.
This is a felted pillbox style hat that I did over Christmas.
And my first socks - pre felting.
Next...lots of socks...
