Low Fodmap Recipes

The most used recipe in our house is my version of white soda bread;

Wheat-free Dairy-free Oaten Soda Loaf

Preheat the oven to 200C
Line a loaf tin with tinfoil.

Ingredients
250g Odlums Tritamyl White Self-Raising flour
25g Instant Hot Oat Cereal such as Ready Brek
75g Porridge Oats, milled in a food processor for a 4 or 5 pulses
3/4 teaspoon salt
2 teaspoons xantham gum
+/- 350 ml of Oat milk such as Oat-Dream

*Sieve the flour into a large bowl.
*Add the oat cereal, milled oats, salt and xanthan gum.
*Make a well in the middle of the bowl slowly trickle in the oat milk while stirring in small circles, slowly drawing in the dry ingredients down from the sides.
*Add milk until the mixture forms a soft dough that comes together in a ball. Continue to work the dough with the wooden spoon for 1 more minute.
*Put dough in the tin and smooth the surface with the wooden spoon.
*Bake in the middle of the oven for 35 to 40 minutes.
*Take out of the tin when done, immediately peel off the tin foil. Then wrap in a clean tea-towel and leave to cool on a rack.(The tea-towel stops the crust from being to tough)


Chicken and Veggie Burgers

Ingredients (this is approximate because I used what I have in the cupboard on the day)
400g raw chicken meat
2 inches of the oaten soda loaf (I use the bit that is left over at the end of the day) chopped roughly
Handful of chopped celery
2 small carrots roughly chopped
1/2 an egg, beaten
Teaspoon of fresh chopped herbs (or half a teaspoon of dried mixed herbs)
Salt and Pepper
1 Teaspoon of Chicken concentrate (Knorr A Touch of Taste)
Oil for frying

Preheat oven to 180C
Put the bread into the food processor and process into breadcrumbs. Then put into a large bowl.
Put carrots and celery in the food processor and chop fine.
Put the veg into the bowl and process the chicken until chopped fine ( but not to a paste)
Mix in the seasonings and the half egg.
Form into patties and fry in hot oil until golden on both sides (2 to 3 minutes each side)
Then put on a baking tray and bake in the oven for approx.15 minutes till cooked through.
